He perfected the craft of this schnitzel in his household kitchen and cooked for anybody who walked through the doorway.

When he came to Australia he wished to do exactly the same, so that he put up schnitzel store in Melbourne and immediately made everybody feel at home. Some years after, his sons Andrew and Tom joined him onto the steel pans and they assembled the Schnitz you watch now.

Cavemen formulate the hammer. Flattened, gold schnitzel is merely a matter of time.

In Poland, youthful Roman Dyduk’s Mama teaches him the craft of this schnitzel: refreshing ingredients, crumbed with pan and love cooked into a delicious golden brown.
